Chicken and Waffles

Useful flagship dish combining fried chicken and waffles, both commercially attractive in the app.

Ingredientes (12)

  • 8 bone-in chicken pieces
  • 2 cups buttermilk
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp fine salt
  • 1/2 tsp black pepper
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp baking powder
  • 1.5 L neutral oil, for frying
  • 2 cups waffle mix batter made from 2 cups flour, 2 tbsp sugar, 2 tsp baking powder, 2 eggs, 1 3/4 cups milk and 4 tbsp melted butter
  • 120 ml maple syrup and hot sauce, to serve

Marinate the chicken in buttermilk, paprika, garlic powder, salt and pepper for at least 30 minutes or up to overnight.

Lift chicken from the marinade, dredge well in the flour mixture and fry in batches until deep golden and cooked through, 12 to 16 minutes depending on size. Drain on a rack.

For the waffles, whisk the waffle batter ingredients just until smooth. Cook in a preheated waffle iron until crisp and golden.
