Pressure-cook the mixed dals with turmeric and water until soft. Temper with ghee, cumin, ginger-garlic paste, chili, and salt.

For baati, mix flour, semolina, salt, and ghee; add water to make a firm dough. Shape into balls.

Bake or roast the baatis until golden and cooked through, then dip briefly in melted ghee.
