  • ghee or oil
  • onion, sliced
  • ginger-garlic paste
  • turmeric
  • salt
  • cumin seeds
  • cardamom
  • bay leaf
  • mutton, bone-in
  • yogurt
  • hot water or stock
  • mint and cilantro, chopped

Wash the rice until the water runs mostly clear and soak 20-30 minutes; drain.

Heat ghee or oil, fry onion until golden, and reserve some for garnish if desired.

Add whole spices and ginger-garlic paste. Add protein or vegetables and cook with salt and powdered spices until lightly sealed.
