  • methi muthia or chopped fenugreek dumplings
  • fresh coconut
  • peanuts
  • sesame seeds
  • cilantro
  • ginger-green chili paste
  • jaggery
  • lemon juice
  • oil

Prepare all vegetables in large chunks. Slit the eggplants and potatoes if stuffing them.

Grind coconut, peanuts, sesame, cilantro, ginger-chili paste, jaggery, lemon juice, and salt to a coarse masala.

Stuff some masala into the eggplants and potatoes; reserve the rest.

Layer root vegetables and beans in a heavy pot with oil, add the remaining masala and a splash of water, cover, and cook on low heat.
