Chicken and Waffles
Useful flagship dish combining fried chicken and waffles, both commercially attractive in the app.
Ingredients (12)
- 8 bone-in chicken pieces
- 2 cups buttermilk
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp fine salt
- 1/2 tsp black pepper
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1.5 L neutral oil, for frying
- 2 cups waffle mix batter made from 2 cups flour, 2 tbsp sugar, 2 tsp baking powder, 2 eggs, 1 3/4 cups milk and 4 tbsp melted butter
- 120 ml maple syrup and hot sauce, to serve

Step 1
Marinate the chicken in buttermilk, paprika, garlic powder, salt and pepper for at least 30 minutes or up to overnight.
Step 2
Heat 5 cm / 2 in oil in a heavy pot to 175C / 350F. Mix flour, cornstarch and baking powder in a shallow bowl.
Step 3
Lift chicken from the marinade, dredge well in the flour mixture and fry in batches until deep golden and cooked through, 12 to 16 minutes depending on size. Drain on a rack.
Step 4
For the waffles, whisk the waffle batter ingredients just until smooth. Cook in a preheated waffle iron until crisp and golden.
Step 5
Serve each waffle topped with fried chicken. Offer maple syrup and hot sauce at the table.
Step 6
Rest fried chicken 5 minutes before serving so the crust sets and stays crisp.
